Since having to prepare Gluten free meals, I’ve been on the lookout for simple, delicious gluten-free recipes the whole family will enjoy.
One problem I have in cooking is that I can never seem to follow a recipe exactly. My family meals tend to turn out yummy, though I constantly substitute for what I already have in my kitchen and often can’t make the same thing the same way ever again.
This particular recipe was a huge success, everyone loved it and I’ve since made it three more times!
Luckily, I remembered what the secret ingredient was that was not in any recipe I referenced for this.
All the similar recipes called for sour cream, but one called for Greek Yogurt. I did not have either of those, so I grabbed something that I always have in my fridge that I thought would substitute nicely for a yoghurt recipe: Mountain High Original Style Plain Low-fat Yoghurt.
I was right. With the yoghurt substitution, the Quinoa was cheesy, creamy and simply delicious! It paired nicely with the steak and barbeque shrimp.
Cheesy Quinoa Bowl with Steak and BBQ Shrimp and Broccoli
An easy Gluten Free dinner the kids will love.
Quinoa
1 c

uncooked quinoa, rinsed and drained

2 c
1 tsp

chicken or vegetable broth
salt and pepper
dry mustard
plain Mountain High Yoghurt
shredded cheddar cheese
|
1 lb
|
Skirt or round steak
|
¼ c
|
Tamari or other gluten free soy sauce
|
1 lb
|
Shrimp, peeled and deveined
|
1 tsp
¼ c
1 lb
|
Olive oil
Stubbs BBQ Sauce or favorite Gluten free BBQ
sauce Broccoli, steamed

The addition of Mountain High Yoghurt gave the quinoa a tangy flavor and creamy texture that was mouthwatering. Next time I will double this recipe!
Mountain High Yoghurt is a great healthy snack all on it’s own.
We like the vanilla flavor by itself or the plain with just a little honey, especially with some berries or in a smoothie. Yum!
