Thanksgiving and holiday party planning are already beginning and you need a holiday party dessert recipe that is quick and easy, but looks like you spent hours creating it. And you want your festive dessert to taste delicious, too, of course. I made these adorable homemade mini pumpkin pies last year for a school party and they were a hit! Such a delicious dessert idea and they look like a professional holiday dessert.
Don’t run away just yet, they’re actually super easy to make! Really! Just two simple ingredients for these muffin tin pies.
Easy Mini Pumpkin Pie Recipe
Ingredients:
- store bought dough (2 packages of 9″ pre-made pie crust dough)
- canned pie filling (enough for 1 9″ pie)
Supplies:
12 cup muffin tin
Directions:
Preheat oven to 425.
Cut dough into about 4″ circles and push into muffin tin. Pour pumpkin pie filling to fill the cups to the top, leaving just a bit of crust sticking up around the edges. Bake at 425 F for 15 min, turn down to 350 F for 25-30 min.
Wallah! Top with whipped cream if you wish and enjoy!
Gluten Free Option:
For Quick Gluten-Free Mini Pumpkin Pies, I use Libby’s canned pumpkin pie filling with a gluten free pie crust mix such as Moon Rabbit Gluten Free Pastry Pie Crust Mix for your gluten free pie crust.
You could also use my favorite homemade pie crust recipe and replace the flour with your favorite gluten free all-purpose baking flour. Make sure the flour is a one-for-one substitute or you may need to add xanthum gum. My favorite gluten free flour is Namaste Foods Gluten Free Organic Perfect Flour Blend.
