Sandwiches are such easy and healthy lunch options that you really can’t go wrong.
When we needed to switch to a gluten-free diet, I had a hard time with lunches at first. I had great recipes for gluten-free dinners, but lunches were harder. It was difficult for me to come up with foods my kids would love that were also fast and nutritious. Often we’d have leftovers for lunch, but the kids didn’t like that very much.
We experimented with different breads and finally found some gluten-free bread we liked. Now for a new problem…

I thought about what would go great with turkey and suddenly was craving cranberries. I wanted something lighter than a Thanksgiving meal for a hot summer day but I needed a delicious recipe that wouldn’t take too long, since lunch was already running late.
Gourmet Turkey Sandwich
Don’t call me basic! No, this is a gourmet sandwich in taste and looks, but is simple and quick to make with just a few ingredients. And it’s a great lunch or dinner for kids!
- Grill some bread. I used gluten-free sandwich bread in a skillet with some butter or bacon grease.
- Heat a few slices of turkey lunchmeat in the skillet at the same time. Flip bread and meat over, drop grated mozzarella cheese onto the bread while hot, so it will begin to melt.
- Sprinkle a small handful of cranberries onto the melted cheese on one of the slices, this will help them stick and not fall out of your sandwich when you pick it up.
- Scoop the warmed meat onto the other slice of bread and top with fresh spinach.
- Press both pieces of bread together on a plate to form your extraordinary sandwich.
- Enjoy while warm.
Just writing this is making my mouth water! Try different variations: add some sprouts, basil, tomato, vinaigrette, olives… whatever you like. Let the kids choose what they want in their sandwiches too.

How to enter:
- Create a turkey sandwich using Foster Farms All Natural Sliced Turkey lunchmeat and other creative ingredients of your choosing.
- Post a photo of your sandwich to Instagram. In the caption, include the list of ingredients and tag @FosterFarms and #DontCallMeBasic. Make sure your profile is public!
Entries can also be emailed to dontcallmebasic@fosterfarms.com. The grand prize includes a two-night stay for two at a Napa Valley luxury hotel, travel to/from and a gourmet picnic lunch ($4,000 value) or $4,000 cash prize. Random weekly drawings are also being held every Friday to give all participants a chance to win. Prizes for the weekly drawings include high-end panini presses or gourmet picnic basket sets. The contest will last the month of August (National Sandwich Month) and is open to all U.S. residents over the age of 18.
Sandwich concoctions will be selected and judged by a panel of culinary and food industry professionals, who will identify five recipe finalists. The grand prize winner will be selected from the finalists by a panel of five food and lifestyle blogger judges. The winner will be announced in early September.

This looks so good! I like how you grill the bread and then add the sandwich filling…it’s a grilled sandwich…yet not. Anything with turkey and cranberry has my vote. Definitely trying this!
This is going on my menu for lunch next week. I always struggle with how to jazz up our “same old, same old” lunches. Cranberry on this sandwich would really appeal to my boys. They eat cranberry sauce like it’s jello whenever we eat at my mom’s house–so she makes it for them almost every week.
This sandwich looks great. I don’t buy as much deli meat as I used to. But when I do, it’s always nitrate free varieties.
