Back-to-school season means everyone is busier. By the time you can get in the kitchen and start preparing for dinner you’re rushed, hungry, and tired. This gluten free pork loin dinner is absolutely delicious and really simple to prepare.
I fell in love with how easy it is to cook Smithfield Marinated Fresh Pork loin when I made my quick gluten-free pork roast recipe with mushrooms over fettuccine. Smithfield Marinated Fresh Pork is already marinated and ready to toss in the oven. There are a variety of flavors and cuts to choose from, and you can find it at your local Safeway in the fresh meat section. I prefer to buy fresh meat whenever possible and Smithfield Marinated Fresh Pork is 100% fresh pork with no artificial ingredients.
I stopped by Safeway the other day and found a flavor I hadn’t tried before; Smithfield Marinated Fresh Applewood Smoked Bacon Pork Loin Filet. I love bacon!
All I had to do was cut open the package and drop the pork loin filet in a baking dish. No prep at all!
I decided to add some garlic and cheddar potatoes to complement the pork. After tossing the cut up potatoes in a bowl to season them, I poured them around the pork loin filet in the same dish, covered the dish with foil and roasted it in the oven. I paired the meat and potatoes with roasted garlic asparagus, which I stuck in the oven as well. I had time left to wait for it to cook, so I whipped up a chunky Cinnamon Apple Pear side dish to serve with dinner because I had a counter full of apples and pears from my fruit trees and they won’t last long. Sweet apples go so well with roasted pork!
We definitely got “Real Flavor, Real Fast!”
I let the pork cook until it reached an internal temperature of 145 degrees, then uncovered it and added the veggies to the oven in a small dish to cook for 10 more minutes, and let my apples and pears simmer. The house smelled amazing from the pork roasting and the apples and pears simmering. The kids kept coming in the kitchen to ask, “What is that delicious smell?”
The pork loin filet came out tender with crisp bacon crusted over the top. The potatoes were mouthwatering with melted cheese coating them. My whole family hovered around, they could hardly wait for me to slice it and bring it to the table! It tasted SO good! I can definitely say this is a new family favorite. A perfect hearty meal for fall evenings, or even a festive holiday dinner.
Gluten-Free Bacon Crusted Oven-Roasted Pork and Cheesy Potatoes
Preheat oven to 375°
Ingredients
- Smithfield Marinated Fresh Applewood Smoked Bacon Pork Loin Filet
- 3-4 medium Russet potatoes cut into pieces
- 1 Tbsp olive oil
- 1 tsp of minced garlic
- 2 tsp salt
- 1 tsp pepper
- 1/2 cup cheddar cheese
Directions
- Place 1 Smithfield Marinated Fresh Applewood Smoked Bacon Pork Loin Filet in a casserole dish, bacon side up.
- Mix potato pieces in a medium bowl with remaining ingredients.
- Add potatoes around pork loin filet in casserole dish and cover with foil.
- Bake at 375 degrees until the internal temperature reaches 145 degrees (160 for medium).
- Uncover. (Add asparagus to oven, recipe below)
- Remove pork from oven. Allow to cool slightly and slice in same dish.
Serving suggestion:
Serve with oven-roasted garlic asparagus (recipe below) and a side of homemade chunky apples and pears.
Oven-Roasted Garlic Asparagus
Prep Time: 5 minutes Cook Time: 10 minutes
Ingredients
- Asparagus spears
- 1 Tbsp butter
- 1 tsp minced garlic
- 1/4 tsp salt
Directions
- Toss asparagus spears with garlic and salt in small baking dish.
- Place tablespoon of butter on top of asparagus in the middle.
- Bake in oven at 375 degrees for 10 minutes.
