How to Get More Vegetables in Your Back to School Routine

Have your kids started school yet? Or homeschooling activities?

Eating healthy when you’re back to busy school nights or back to overly full homeschooling schedules is not an easy transition. Back to school time is such a busy time for all families and as an exhausted mom, myself,  I often don’t have the time or energy to cook a balanced meal. We want our families to eat good healthy food, but it’s not always practical.

Easy to-go foods are packed with too much salt, sugar, and other less than desirable ingredients. Even if you do find a healthy option to chow down before your child’s game practice or dance class, it’s rare that vegetables would be included. Seems like an ongoing question, but how do we get our kids to eat more vegetables? And not just the kids! I’m just as guilty of not eating enough vegetables when constantly on the run or getting home late so many nights a week. I want to be a good example in teaching healthy habits as well as feel good and keep my body strong and healthy, too.

Honestly, I’m not a big fan of salads, but these looked absolutely delicious!  They are packaged as single servings and fit comfortably in a lunch box. The salads even included a fork! Which was a pleasant surprise as I didn’t think to bring one with me the first time I brought a Ready Pac Foods Salad along with me.

The Ready Pac Foods salad mixes are of many different flavor combinations and include a protein, so this is more than a side salad. These are great for a meal!  The lettuce in each was crisp and fresh.

The toppings are separated by packaging so all stays fresh, and you put the toppings on yourself so you can decide how much of what you’d like on your salad. I loved all the variety in toppings and dressing flavors! And how different each one was. I’ve never experienced so many salad flavors. I guess I haven’t been very adventurous.

    I make fruit smoothies and add carrots or another veggie in it to sneak some more veggies into their diet.

    I try to sneak them in everything I make and I keep things like carrots and celery cut up in the fridge so they are quick and easy to grab and limit the amount of others snacks in the house

    I don’t fight with them over the vegetables they hate. I try to have the ones they do like available, cleaned and ready.

    I put extra veggies in pasta sauce that I make in batches and freeze. And if I’m prepping a meal that uses veggies, I’ll cut up a few more into sticks for the kids to nibble on for the next day or two.
