I’ve always wanted to get a CSA farm box full of fresh produce, but the pick up places were not very close by, so I have never gotten around to it. I do like to shop at the farmers market, but can’t make it there every week, though I would love to.

There are different options available, if you’d like all veggies, all fruit or a mixture, what size box as well as how often you would like it to come to you. You can also customize your order a few days before delivery if you’d like to change or add anything. I chose the mixed fruits and veggie box to order. They delivered quickly and the food was all very fresh.
My kids were so excited to get the farm box on our doorstep in the morning!
We opened it up and it sure was full of gorgeous fruits and vegetables!
Our box included:

It was a ton of fun to be surprised with something I hadn’t heard of before and have the great experience of trying something new. Have you heard of Kiwi Berries? Delicious! They’re like mini kiwis and they taste just like kiwis, but are way more fun!
The rest of the foods were familiar and easy to toss in a healthy dinner recipe if not to eat by itself.

The one thing I wasn’t sure what to do with was the bok choy.
The only thing I knew bok choy went well in was Chinese food and I had just made a stir fry dinner the night before the box came. So, I put my thinking cap on, Googled bok choy recipes, and one thing I read that I found interesting was that you can replace it for lettuce or celery in just about anything. It happened to be taco night tonight, so I thought, why not toss it in with my taco meat for a healthy taco filling?
It does have a stronger flavor than lettuce, so I used regular lettuce as a garnish to top my tacos, but the meat was great and definitely fun to change up the same ol’ weekly taco night we’re used to.
Asian meets Mexican?
Healthy Taco Filling – Beef and Bok Choy
- Brown 1 lb of ground beef, drain.
- Add taco seasonings of your choice (I used half of a gluten free taco seasoning packet)
- Follow seasoning packet directions or add 1/2 cup of water, bring to a boil. Turn to low and simmer until water has been absorbed, about 10 minutes.
- Add half a chopped onion, 1 tbsp of chopped garlic, and 1 small baby bok choy, finely chopped.
- Let simmer till onions are clear.
- Add a few spoonfuls of salsa, depending on how spicy you prefer your tacos.
- Mix well and let simmer for a few minutes until all juices are absorbed, about 3-5 minutes.
- Enjoy in a taco shell with your favorite toppings!
You could also wrap it in a tortilla with beans and cheese for a delicious burrito, or add to any Mexican style dish!

Tips for a perfect family Taco Night
My kids love to put together their own tacos or burritos. That’s what makes taco night so fun!
I put everyone’s favorite taco toppings in separate small bowls and load them onto a tray to make it easier to carry to and from the table. It also catches the mess as my kids spoon sliced black olives, cheese, and guacamole onto their plates.
We can all dish up and enjoy whatever Mexican dish we can create, with what is on the table that night. We call it Fiesta Night rather than taco night because my daughter enjoys making a taco salad, nachos, or a quesadilla, my son always has a burrito, my husband likes hard shell tacos, and I’ll have soft tacos or a burrito.
I change up the meat so it’s not quite the same every week, entirely for the sake of my husband and I. Sometimes I make steak or grilled chicken and I’ll change from red sauce to green. Sometimes I’ll use black beans, but my kids like re-fried beans best, so we haven’t had that in a while.
Get creative, let the kids come up with their own way to enjoy the fixings, and enjoy good food and family time.

We love taco nights and we often have a taco bar when we have guests. This csa box looks like a great value.
Tacos is one my family’s favorite weeknight meals. I love the idea of using bok choy in them since it’s full of vitamins K and C and rich in antioxidants. I wish Farm Fresh to You was available here in Virginia. I have been trying to find a CSA to join instead but something delivered right to our door would be ideal.
